The Production Department of SriLankan Catering is responsible for producing meals for SriLankan Airlines and other carriers, which operates out of Colombo Airport, like SriLankan Airlines, Emirates, Malaysia Airlines, Condor, etc. The Production Department works on a 24hrs basis.

The Production manager is from India and is a qualified person from the Hotel College. He has worked in India and Gulf and has 25 years of airline catering experience and has been trained in US, Philippines, and UK. The airlines catered under his supervision during his job at India and Gulf were British Airways, Air France, Saudia, KLM, Northwest, Pan Am, Singapore Airlines, etc. The maximum number of meals produced under his supervision at SriLankan Catering - 14,700 meals per day.
The Executive Chef at SriLankan Catering is an Australian National, who has international experience in five star award winning properties. He has over 20 years in the hospitality industry and has a passion for quality and innovation.
The Sous Chefs are Sri Lankans with varied experience in the Island and abroad. They command more than 20 years of experience with the industry.
Apart from the Production Manager, Executive Chef and Sous Chefs, there are Chef De Parties, Demi Chef De Parties, Commis and Trainees who are capable of producing Oriental (Japanese & Chinese), Western, Local, Indian food as per the quality and quantity specifications of the airlines.
The Production Department WORKS under HACCP (Hazard Analysis Critical Control Point) guidelines.
